Menu plans took a bit of a pause for my family systems, but never fear. My family still ate. Here’s what’s on the docket for the coming days:
1. Shrimp and Mushroom Sauce — I found this one on Pinterest. Siracha and cream kind of has my name all over it. My kids will almost eat anything with shrimp in it. This one may try that idea….
2. Pesto Chicken Pizza — make pizza dough, top with store-bought pesto (to taste, I like a lot of pesto on mine!), then a can of Costco chicken (or leftover chicken, or frozen chicken, or rotisserie chicken — whatever you have on hand!). A lot of the time, I will mix ths with a little pesto to keep it from tasting dry, then top with mozerella (I prefer fresh, but I have done regular grated italian cheese blend), top that with sundried tomatoes (if you’re feeling fancy) throw it in the oven according to your pizza dough instructions and WHAMO. Dinner. I should really do a post on this…. I’m gonna get on that. 🙂
3. Brushetta Chicken — make a basic bruschetta blend, then sprinkle that over chicken, top with fresh mozerella (I love the pre-sliced kind at costco) throw it in the oven until it’s done. TASTY {I actually finally blogged about it — you can find the recipe here}
4. Sausage spaghetti sauce with polenta — buy or make a spaghetti sauce with some sausage (I try to use chicken) and put that over polenta. I never was a polenta fan until recently and now I find it DELISH! I couldn’t find polenta cheap around me, so I end-up buying it from Amazon. We have polenta maybe a couple of times/month….
5. Black bean burritos — the cream cheese in this recipe makes it extra tasty!
6. Tex Mex Rice — love the charred rice on the bottom of the pan in this dish. YUM. Does require you being near it to stir every 5 minutes for a while. I need to do a post on cooking brown rice and black beans in my pressure cooker…. that makes this meal REALLY cheap!
7. Chuck’s Mac and Cheese — tasty and it even has extra protein due to cottage cheese. I will be having a LOT of salad with a tiny portion of this. I will REALLY enjoy that portion though!
8. Ham and Potato Soup — gotta eat some soup before we start to boil here in the desert. Did I mention my heat came on the other day. It’s COLD! 🙂
9. Pork Loin and Potatoes — this was a new favorite from my Pretty Fierce Menu Plan — cut-up some red potatoes, add them and pork tenderloin into the crock pot and top with a can of cream of mushroom (or chicken, or whatever “cream of” you have on hand and prefer). Turn it on, get busy for 6-8 hours, eat after that. 🙂 It sounded sketchy but we all ended-up liking it! Great for Sunday dinner!
Anyway, that’s what’s on the list. This should do us a couple of weeks. There’s a lot of tasty things on here and they are all doable in my new “lifestyle”, so that’s a happy thing!
