This is one of my favorite weeknight meals when I have a lot going on. The kids like it, it’s filling. Add a salad and it’s even somewhat healthy, and the recipe couldn’t be easier!
First off, I make my dough. I LOVE the Pioneer Woman’s dough recipe, you can find it here. Maybe it’s mixing the flour with the olive oil first or something, but WOW it is GOOD! I split it in two when I make it, and I freeze one for another time. NOTE: You’ll need to get the crust out in the morning and leave it on the counter all day to thaw, it will be ready just about by dinner time (unless it’s summer, and then I will have to put it in the fridge after lunch).
Then, I spoon on the BBQ Sauce that I have in the fridge (or in the pantry). Figure out how much you like, and put that much on. I tend to go somewhat thin, as I am not a HUGE BBQ sauce lover, but it is good on this.
Next I combine some shredded chicken (be it leftovers, or a can from Costco, or some I have frozen) and some more BBQ Sauce to coat (the amount is up to you).
Throw that on the pizza.
Throw some black beans on the pizza. I probably do about 1/2 a can. I often pre-cook beans in my pressure cooker (which I love) and freeze them in can-like portions, so sometimes I have leftovers of those in the fridge. A full can is too many, your kids will hate you.
Then, add cheese. I originally got this recipe from Weight Watchers, and they of course add very little cheese. I, do.
Additional optional toppings which make it tastier, but I don’t always have on hand:

Cilantro (in the picture I sprinkled on some dried, it’s not near as good, but it’s still tasty without it).

Minced red onion. Kids don’t love this, but I do. I really love onion. How did I turn into an onion lover?
Cook in the oven according to the pizza dough instructions and you have dinner! Another maternal triumph completed. You’ll just do it again tomorrow. And the next day, and the next day… yada, yada, yada…
