I have started coming up with a TON of recipes that I have most of the stuff on hand for, and having those as my menu plan. Things in the fall are a bit more crazy than usual at our house and it’s nice to have a lot of options Here’s what’s on board:
- Sage Fried white beans with BBQ chicken and a salad
- Becky’s Burritos (recipe on request, their vegetarian and delicious)
- Polenta with marinara sauce
- Meatball Sub Casserole
- BBQ Chicken and black bean pizza
- Calzone Rolls
- Shannon’s Yummy Pasta & Chicken (the one with cream of mushroom, cream cheese and ranch dressing mix — my friend Shannon gave me the recipe)
- Buffalo Sliders
- Crepes (most likely with chocolate and bannan, possibly strawberries or a savory kind… ideas?)
- Chicken Enchilada Casserole
- Carne Asada Tacos
- Beet and Gorgonzola Salad (from you on a diet)
- Lemon Caper chicken with Sweet Potatoe Puree (also from you on a diet)
- Oatmeal Pancakes
- Portebello Sandwiches
- Pasta Carbonara
- Spanish Rice Bake
So, that should probably get me through the month. I sometimes come-up with a few things to add to it along the way while I’m reading magazines.
